Pearse Lyons Distillery in one of five finalists who have been shortlisted for the Best Dublin Visitor Experience (less than 100,000 visitors) at the 2019 Irish Tourism Industry Awards. The submission was based on its distillery tours and tastings experiences, which showcase high standards of hospitality excellence and customer service. The submission also focused on promoting Dublin as a vibrant city, side by side with nature, while enhancing incremental tourism activity and its economic contribution to the Liberties, Dublin.
The awards, which take place every two years, are organised by the Irish Tourism Industry Confederation (ITIC), Fáilte Ireland, Tourism Ireland and industry partners. The Awards celebrate excellence, innovation and success within tourism, Ireland’s largest indigenous industry and one that employs 254,000 around the country. This year’s ceremony takes place on Friday 1st February in the Clayton Hotel Burlington Road, Dublin.

The Pearse Whiskey Collection
The Original has a light, smooth and easy taste with a hint of spearmint that warms to hints of semi-sweet chocolate, light oak wood, creamy vanilla and light caramel. It has a mild malt character, is well balanced and finishes with a crisp smooth spice.
Our Distiller’s Choice has a smooth, warm, light oak flavour with hints of green grape evolving to caramelised pear. As Pearse Distiller’s Choice develops you will savour a hint of cocoa and dried fruits while finishing with notes of stewed apple, clove and custard.
If a 12 year old single malt is more your style, our Founder’s Choice has hints of lemon, dried orange and a touch of honeysuckle which finishes deliciously smooth and leaves you with warm notes of ginger and clove.

Presented in 4,000 individually numbered bottles, this limited release 5-Year-Old Single Malt was produced on two small-batch copper pot stills, and aged in bourbon casks.

SuperValu’s Premium Irish Whiskey collection and select on-trade to sell 4,000 individually numbered bottles
27th July 2018: The Pearse Lyons Distillery last night celebrated the general release of
the exclusive Pearse 5-Year-Old Single Malt Irish Whiskey. The single malt carries the first new five-year age statement to appear on an Irish whiskey in more than 25 years. The limited release whiskey was produced on two small-batch copper pot stills, and aged in bourbon casks. Presented in 4,000 individually numbered bottles, the product will exclusively be on sale in SuperValu’s Premium Irish Whiskey section and select on-trade establishments nationwide.

Using Irish malted barley and our own special yeast strain, the whiskey spirit was produced on our unique copper pot stills whose unusual design is credited with giving the whiskey a special character.”

The development of this new Irish whiskey stream began in 2011 when the late Dr. Pearse Lyons, who was keen to revisit his roots in Irish brewing and distilling, transported two small-batch copper pot stills from Kentucky to Ireland. The distinctive pot stills began making spirit in Ireland in 2012 and when the Pearse Lyons Distillery opened in 2017 in the heart of Dublin’s Whiskey District, they took pride of place, nestled in the sanctuary of the refurbished St. James Church.
The unusual design of the small-batch copper stills includes a “neck and ball” configuration which assists in refining the spirit character in the first step of distillation. The spirit still contains four rectification plates that further purify and refine the spirit collected, harnessing the fullness, complexity and refinement of flavour of a double-distilled Irish Whiskey.

The bottle design has been inspired by St James Church, the home of the Pearse Lyons Distillery. The centrepiece of the label features the octagonal spire, the view seen when looking up from inside the distillery and the colour scheme reflects the copper stills which were used to produce the whiskey. Each of the limited-edition bottles has been individually numbered and the first bottle will be positioned in pride of place at the Pearse Lyons Distillery in The Liberties.

On July 25, Pearse Lyons Distillery will celebrate the feast day of St. James, the Apostle, which is celebrated on the liturgical calendars of the Roman Catholic, Anglican, Lutheran and certain Protestant churches. This date is also significant for the distillery, as it was July 25, 2017, when the official ribbon was cut by owners and founders, Pearse and Deirdre Lyons.
Links between Dublin and the iconic Camino de Santiago
The links between this ancient part of Dublin and St. James, the Apostle span more than 800 years. Manuscripts dating back to the thirteenth century report the establishment of a hospital for pilgrims who intended to travel to the shrine of St. James at Santiago de Compostela. In medieval times, the journey from Dublin traditionally started near St. James’s Gate an established Hiberno-Spanish trading route. Maps of the city from medieval times show that just inside the westerly gate of the city was the parish of St. Catherine; outside the gate is the parish of St. James.
The first Church of St. James’s was built in the Liberties in 1196, which is today the Pearse Lyons Distillery. The connection with this ancient pilgrimage is embraced in the beautiful stained-glass window over the choir balcony inside the newly refurbished distillery.
Dublin traditions on the Feast of St. James
One long forgotten tradition in the Liberties, Dublin, was to decorate the headstones with white paper decorations. This day was known was Pattern Sunday. A pattern (Irish: pátrún) refers to the devotions that take place within a parish on the feast day of the patron saint of the parish. To celebrate the Feast of St. James, headstones in the surrounding graveyard will be decorated in white paper patterns from July 25 to 29, 2018.
All visitors to the distillery on July 25, will have the opportunity to see a special exhibition of imagery taken upon the Camino by pilgrims upon their journey to the Cathedral of Santiago de Compostela in Galicia. Within the body of the former church, the Pilgrims Book, will be on view, where visitors can see the hundreds of names inscribed upon this historic document, which belongs to The Camino Society of Ireland. Guests will also be offered a Camino Passport, with their first stamp from Pearse Lyons Distillery.
Upon completion of the tour, visitors will then be invited to join in a small toast to Pearse Lyons, owner and founder of the distillery. July 25 signifies not only the Feast of St. James but the rejuvenation of the former church and its new beginnings as a working distillery in the Liberties, Dublin.
