Mighty Molly & Little Lizzie
In December 2011, as the last independent Irish Whiskey distillery, Cooley Distillery, was sold to Beam Inc., Dr. Pearse Lyons organised for two small-batch copper pot stills from Kentucky to be sent to Ireland. Six years later, as Dublin’s only independent Irish Whiskey distillery, Teeling Whiskey, is partially sold to Bacardi, Pearse Lyons Distillery opened its doors.
The site is now home to our two small-batch copper pot stills following their pilgrimage to Ireland. They are an unusual pair of Kentucky small-batch copper stills, and it is with these stills that we carefully craft our malt Irish Whiskeys. Their unique design gives our Irish Whiskeys a special character.
Nestled in the sanctuary of St. James’ Church, the two copper pot stills have been christened Mighty Molly and Little Lizzie. It is fitting, perhaps, that they were named in honour of Dr. Lyons’ distant relatives, officially welcoming them to the family.
Mighty Molly is our wash still, and she is a small-batch copper still manufactured in Kentucky with her own unique whiskey heritage. Molly’s design includes a “neck and ball” configuration to assist in refining the spirit character in the first step of our distillation process.
Little Lizzie is our spirit still. Lizzie is somewhat unusual as a pot still, as she has four rectification plates installed in her neck that further purify and refine the spirit collected to make our Irish Whiskeys. Through the special design of Little Lizzie, we are able to harness the fullness, complexity and refinement of flavour of a double-distilled Irish Whiskey.
